Kashmiri Aloo Dum
Ingredients :
- 12-15 cashew nuts
- 2-3 medium sized potatoes
- 1 medium sized onion
- 1 medium sized tomato
- Ginger garlic paste
- Chilli paste
- Kashmiri lal mirch powder
- Dhaniya powder
- Jeera powder
- Garam masala
- 2-3 green caradom
- 2-3 white caradom
- Teaspoon of shahi jeera
- 2 tej patta
- 2 cinnamon sticks
- 2-3 cloves
- Heavy cream
- Cooking oil
- Salt as per taste
Detailed Process:
- Dry roast the cashew and make a cashew paste and keep it separately in a bowl.
- Make an onion puree and keep it separately
- Make a tomato puree and keep it separately
- Cut the potatoes into small size or any other size of your choice and add 1 teaspoon of Kashmiri lal mirch and salt and give them a good mix
- Heat the oil and add some oil into it
- Fry them lightly in the oil. Take the potatoes out and let them cool completely
- Heat the pan and add a little oil
- Fry onion puree in the oil
- Add ginger garlic and chilli paste and fry it together with oil
- Add salt and dry masala powders and let them fry completely
- Add tomato puree and let them fry completely with the oil
- Add cashew paste into the mixture and let it fry completely
- Now, finally add fried potatoes and let the masala get mixed completely.
- Add water as per your choice and let it boil for a good 5-7 minutes
- Cover the mixture and let it boil
- Finally top the curry with heavy cream and give it another boil for 2-3 minutes.
Now, the curry is ready to be served
